PUCUK PAKU HOT SPICY COCONUT MILK CURRY

Ingredients

1 bunch pucuk paku
1 cup thin coconut milk
2 cups thick coconut milk
1 tablespoon dried anchovies or dried shrimps

To be made into a paste [blend]:
15 bird eye chillies
2 shallots
1/2 inch fresh tumeric
salt to taste

Method :
1. Clean the pucuk paku by removing the leaves from the stems. Wash and rinse.
2. Add in all ingredients except thick coconut and let it boil.
3. Once boiled, pour in the thick coconut milk and taste the salt. Keep stirring.
4. Once boiled, remove from heat and serve with plain rice and crispy fried fish.
