KUEH TALAM CENDUL

Bahan Lapisan Bawah

1 cawan tepung beras
4 s/b gula merah
4 s/b gula pasir
3 cawan air
1 s/k garam

Cara
1. Panaskan kukusan.
2. Gaulkan semua bahan dan tapiskan dlam kuali non stik dan kacau sehingga agak panas.
3. Tuangkan dalam loyang yg telah disapukan sedikit minyak.
4. Kukuskan selama 30 minit.
5. Bila nak bubuh adunan atas, cakarkan permukaan ini. Pastikan permukaannya kering.


Bahan Lapisan Atas
1 cawan cendul
1 cawan tepung beras
3 s/b tepung jagung
secubit garam
3 cawan santan pekat

Cara
1. Gaulkan semua bahan kecuali cendul supaya sebati dan rata.
2. Tapiskan kedalam kuali tak lekat dan masukkan cendul.
3. Kacau diatas apai perlahan agak2 suam kuku.
3. Tutup api dan tuangkan keatas lapisan bawah yg telah dicakar. [Pastikan lapisan bawah tidak basah supaya lapisanan atas akan melekat dengan baik]
4. Kukuskan lagi 20 minit.
5. Sejukkan betul-betul dan potong untuk dihidangkan.

Bottom Layer Ingredients[/b]
1 cup rice flour
4 tbsp dark brown sugar
4 tb sp sugar
3 cups water
1 tsp salt

Method
1. Prepare the steamer dan bring to boil.
2. Mix all the ingredients and filter into a wok n cook for few minutes or till warm.
3. Pour into spread with oil 10 inches tray.
4. Steam for 30 minutes.
5. When putting the top layer scratch surface. Make sure thee surface dry from water.


Top Layer Ingredients
1 cup cendul
1 cup rice flour
3 tbsp cornflour
3 cups thick coconut milk [1/2 coconut]
salt to taste


Method
1. Mix well the ingredients except cendul.
2. Filter the batter into wok and add cendul.
3. Slowly stir on small fire till warm.
4. Pour onto the scratched bottom layer. Make sure the surface is not wet to get a good stuck.
5. Steam again another 20 minutes.
6. Let the kueh really cool before cut and serve.
